Broccoli Pasta

Broccoli Pasta

1.5 cups any short cut pasta
1 large head of Broccoli
EVOO
2 tablespoons Pesto Sauce
10 Garlic Cloves, minced
1 cup Parmesan
1 Lemon

Cook pasta as directed. Once cooked drain and leave in the strainer
Cut broccoli very fine and then steam
In same pan as you cooked pasta add some EVOO and the garlic. Over med-high heat and let simmer for about 1-2 minuets
Then add in pasta, broccoli, pesto, and juice of one lemon. Make sure everything is nice, warm and mixed together
Once everything is well mixed add in the parmesan cheese

This is so great! It is a great side dish or you could eat it with some grilled chicken or fish.

Eggplant Herb Pasta


As I have said before, we are trying to eat less meat around here and more veggies and healthy foods. So tonight I tried my hand at making a meal with eggplant and it turned out to be wonderful. This was my first time to ever eat eggplant and I really did like it and will be eating it again.

Eggplant Herb Pasta
1 large eggplant
½ Large Package of Egg Noodles
Pesto Sauce (half the recipe)
1 Bunch Asparagus
1 Bunch Green Onion
Parsley
Dill
1 Cup Feta Cheese
Extra Virgin Olive Oil

• Cut eggplant into small pieces. Place on baking sheet and bake for 20 min at 400. I added some salt, pepper, and EVOO to it before placing it in the oven
• Cook Noodles as directed
• Make pesto sauce and set aside
• Place asparagus in a large cooking pan with some cooking spray and cook on medium high for about 5 minuets. Set aside
• Cut onion, dill, and parsley into fine pieces and set aside
• Once noodles are cooked drain and place into a large bowl. Drizzle some EVOO and mix until noodles are coated
• Once coated, add eggplant, asparagus, dill, onion, parsley, pesto and feta. Mix all together well.
• Then you are ready to serve

This was such a refreshing meal that I could eat all the time. It was light yet filling. I am not a fan of eggplant. I also loved all the herbs in this meal. I am getting used to new and fresh flavors that I normally don’t cook with and I love it!

Super Easy Mac and Cheese



This is one of my favorite Mac and Cheese recipes. It takes virtually no time and energy.

Super Easy Mac and Cheese
1 Cup Elbow Pasta
1 Can Cream of Cheddar Soup
1/2 Soup Can Milk
1/2 Soup Can Water

--Cook pasta as dirceted drain and then place back into pot.
--Add in Cheddar Soup, Milk and Water
--Mix well together

That is ALL!!! This is a great dinner and kids love this too.

Tonight I served mine with BBQ Turkey Sausage on Hawaiian Rolls.

To make the BBQ Turkey Sausage I cut 2 packages of Oscar Meyer Turkey Smoked Sausage into small pieces and place into a pan. Add in Kraft Original BBQ Sauce (as much as you would like) and I add a bit of Franks Buffalo Sauce. Let simmer on the stove for about 1 hour. Then just place on rolls!!

So easy and it makes enough for leftovers!

Spinach Stuffed Pasta



This is a great super easy meal. It is a great dinner for those nights you don't want to eat meat, and it is filling.


Spinach Stuffed Pasta
Jumbo Pasta Shells (10-12)
Pasta Sauce
Ricotta Cheese
Frozen Spinach

Cook Pasta As Directed. I use about 10-12 of the jumbo pasta shells.
Saute frozen spinach over the stove until warm. 
Add in Ricotta cheese, as much as you would like.
Once pasta is cooked and drained place shells in an oven safe dish. 
Scoop in spinach cheese mixture. 
Poor pasta sauce over pasta shells and place in oven.
I cook it at 300 until pasta sauce starts to bubble. (10-12 min).

Then place several shells on each plate and I serve it with a side salad. 

This meal is also good for leftovers. Kids love this meal as well and I usually serve theirs with a veggie instead of a salad.

When you don't have too much time or want a non meat meal this is a winner!

Easy Homemade Lasagna



Lasagna is one of my husbands favorite meals. The lasagna that I make is so easy anyone one can do this. It also taste great as a leftover and freezes well.

Easy Lasagna
1 lb Ground Turkey
1 jar Ragu Original Sauce
Ricotta Cheese
Mozzarella Cheese
Parmesan Cheese
Lasagna Noodles (about 6-8 broken in half)
Oregano Leaves
Garlic Powder

Cook noodles as directed on box.
Cook meet in a large pan until cooked through. Then drain and rinse with warm water. Return to pan.
Add in jar of pasta sauce and ricotta cheese (as much as you like). I mix in cheese until the red of the sauce turn to a pink tint.
Add some dashes of oregano and garlic. Stir all in until well mixed.
I use a 9x9 Pyrex dish. Spray with non stick spray. 
I use 4 noodles for each layer.

Layer (3x):
Noodles
Meat Mixture
Mozzarella
Parmesan

Place in  oven at 400 and cook until golden brown on top and bubbly.

Great sides dishes are caesar salad, green beans and rolls (i use the whole wheat yeast mixture to make rolls). 

This really doesn't take too much time and it is so great. Everyone in the family will love this. 
If you have a larger family or want more to save over then just double recipe.
