My great friend Heather gave me this recipe and it is so fantastic!

Poppy Seed Chicken

3 cups of cubed chicken that has been boiled
2 cans of cream of chicken soup (sub cream of mushroom if you prefer)
1 8oz container of sour cream
1 1/2 sleeves of crushed Ritz crackers
1 1/2 sticks of melted butter
2 Tablespoons of poppy seeds

  • Preheat oven to 350 degrees. 
  • Mix together in large bowl, chicken, soup, sour cream and poppy seeds. 
  • Spread 3/4 of cracker mixture along bottom of 9x13 casserole dish. 
  • Next, place chicken mixture. 
  • Top with remaining cracker mixture. 
  • Bake at 350 for 1 hour. 
  • Let cool for 5 mins before serving.
A great side to this is roasted potatoes or wild rice!

Maple Glazed Chicken


I found this glaze at www.carriescooking.com. We eat chicken several times a week and I needed something to spice up our menu. It was really good. I added some sautéed onions on top and it was wonderful.

Maple Glazed Chicken
4 Chicken Breasts
1-2 Cups Cooked Brown Rice
½ -1 Onion Sautéed
¼ Cup Maple Syrup (I used a Light Syrup)
1 Tablespoon Tomato Paste
2 Teaspoon Red Wine Vinegar
¼ Teaspoon Salt
2 Garlic Cloves Minced

• Grill Chick with Salt and Pepper
• Cook rice and set aside
• In a pan place onion with a bit of oil and sauté
• In a small pot add syrup, tomato paste, vinegar, salt, and garlic. Mix well and heat over medium low heat.
• On a plate place rice, chicken, glaze, and the onions

This really was such a great dinner and healthy. You could add some great veggies on the side of this meal and it would be fantastic.

Cara's Chinese Dinner



I have really been in the mood lately for Chinese food, so tonight I thought I would make my own Chinese restaurant style dish.

Cara’s Chinese
Rice Noodles
Yellow Squash
Zucchini Squash
Thinly sliced carrots (from the bag)
Peanuts
3 Chicken Breast
Peanut Sauce

• Cook noodles as directed on box
• Grill Chicken with a bit of salt and pepper and once done cut into small pieces
• Cut squash and zucchini into thin slices
• Add squash, zucchini, and carrots into a skillet cooking at medium high. Add some soy sauce. Cover with lid for about 3 minuets. Lift cover and stir. Let cook with lid off for about 5 more min.

Peanut Sauce
2 tablespoons creamy peanut butter
2 tablespoons soy sauce
¼ cup water
1 tablespoon brown sugar
4 cloves of garlic minced

Mix all ingredients in a saucepan over low heat. Constantly stirring. Once melted and thickened up it is ready to serve.

In a bowl place noodles, veggie mix, chicken, peanut sauce, and a hand full of peanuts.

This is a great meal when you feel you want some Chinese takeout!
I got the recipe for the Peanut Sauce from www.cooks.com. In their recipe they added lemon juice but I didn’t add that into mine and it tasted fin.

Avocado Chicken Salad


This is one of out staple meals around here. Thanks to one of my great friends Mandy who I got this salad recipe from.

Avocado Chicken Salad
1 Head of Lettus
Feta Cheese
1-2 Avocados
1 Jar Hearts of Palm
1-2 Medium Tomatoes
2-3 Marinaded Chicken
Italian Dressing (recipe in archives)

--Clean and cut lettus in small pieces and set aside.
--Cut avocado, hearts of palm, and tomatoes into small pieces.
--Grill marinaded chicken (marinade to liking) and then cut into small pieces. 
--In a large bowl put lettus, avocado, tomato, feta cheese crumbles, and chicken. 
--Top with Italian Dressing and then mix together. 

Such a great salad that is not heavy. I love it because it is so filling but you don't feel bad after eathing it live some salads. 

You can use this as a side salad is you don't add in the chicken. It goes great with salmon!! Mandy made it for us with Salmon and it made the meal so wonderful!!

Fast Dinner

So today was one of those days where I just really didn't feel like being in the kitchen. So that leaves me with the question of what can I do for dinner. 

Well here was what we had: 
1 Rotisserie Chicken
Broccoli
Texas Toast
Brown Rice

This was such an easy meal where I really didn't spend more than 20 min. in the kitchen from start to beginning.

I usually get my Rotisserie Chicken from Kroger but many grocery stores carry them.

Hope this is a good idea for those days you just don't want to cook!

Caribbean Jerk Chicken


This is one of my favorite meals. My sister in law and her husband made this dish for last year when we had a family vacation at the beach! Thank you Sarah and Steven!

Caribbean Jerk Chicken
4 Chicken Breasts
1 Caribbean Jerk Marinade
1 Avocado
1 Tomato
1 Can of Sliced Pineapples
4 Swiss Cheese Slices
Hamburger Buns

Marinade the chicken breasts for several hours and then grill till cooked through
Place buns in ovens so that they can warm about 5-7 min. on lowest setting
Once grilled place chicken on bun and then top with cheese, slice of tomato, and avocado slices

This is a great easy good dinner...it makes me always think of spring and summer time.
Serve with the Avocado Dip below, baked beans, or sweet potato fries!
